Fermentation is often presented as a trend, but that framing misses the scale of the subject. Fermentation is one of the oldest technologies humans ever mastered, a method for preserving harvests, building flavor, managing risk, and transforming local ingredients into cultural identity. Travel through fermentation traditions and you are really traveling through different answers to the same question: how do people keep food alive long enough to make a cuisine?
