Georgia's wine story begins before modern wine countries begin keeping score. The qvevri tradition, in which clay vessels are buried in the ground and used to ferment and age wine, is not a novelty for tourists but a continuity of practice that makes the phrase ancient wine culture feel almost insufficient. What is changing now is not the age of the tradition. It is the world's willingness to pay attention.
